Dopo 24 ore viene spremuta direttamente tramite torchio verticale e fatta fermentare in piccole vasche a temperatura naturale fra i 28 e i 30 C. Alla fermentazione segue quindi un affinamento di 6 mesi in vasca a contatto con le fecce nobili
